Sapa, a mountainous town in Lao Cai province, is famous for not only its beautiful natural scenery and cool climate but also its dishes carrying typical flavor of the land. When visitors come to Sapa, they will have an opportunity to visit Thac Bac (Silver Waterfall), conquer majestic Fansipan Mountain and especially enjoy dishes made from salmon, a popular kind of fish in western countries. In addition, they will have a chance to see how native people feed salmon and visit the biggest salmon farm in Northern Vietnam.
Sapa is a mountainous town. However, it is famous for its dishes made from fish, especially salmon which mainly lives in cold areas. Dishes made from salmon are delicious and have high nutritious value and they are popular with visitors when they come to Sapa, Lao Cai. In 2006, the first litter of salmon was imported to Vietnam from Finland. And the Research Institute for Aquaculture No.1 succeeded in experimentally feeding them, thus providing a European specialty to Vietnam’s market and making Sapa become more attractive to visitors when they come to the town and have a chance to enjoy dishes made from salmon.
At present, the Center for Cold Water Aquaculture Research under the Research Institute for Aquaculture No. 1 has 3 salmon feeding areas. One area is for breed, one for grown salmon and one for fully grown salmon. In addition, there are areas for biological experiments. Currently, a house in which salmon is fed at the foot of Fansipan Mountain attracts a lot of tourists. They come here to get some insights into salmon’s reproductive characteristics and how salmon is taken care of.
Sapa is expected to impress visitors with dishes made from not only salmon but also sturgeons and white fish. Sapa salmon is fresh and lean, which can be used for making different dishes such as salmon salad, smoked salmon and so on. These dishes always leave a vivid impression on visitors. In addition, according to famous cooks at restaurants in Sapa and Hanoi, the quality of salmon in Sapa is as good as that of imported one.
Salmon skin is greasy and salmon meat is a source of nutrients for the body such as omega 3, DHA, B12, proteins, etc. Salmon meat is lean and delicious, which can be used for making various dishes. Raw salmon salad served with a mixture of soya-sauce and mustard following Japanese cuisine style has penetrated into the cuisine of many countries including Vietnam. Dishes made from salmon are good for old people and small children. Dishes made from salmon are also good for those who are on diet. In addition, dishes made from salmon provide us with proteins.
You may have eaten many dishes made from salmon. However, when you have a chance to enjoy “deep-fried salmon”, you will never forget its taste. When you fry salmon, you should not fry them for long, because then, salmon meat will become dry. And you should not spice salmon meat much. And you should use fresh salmon. In hot places, salmon should be placed into refrigerators. The dish has a special taste. Each piece is crispy. Salmon meat is delicious. Along with Raw salmon salad, deep-fried salmon will definitely satisfy every customer when they come to Sapa.
