Dubbed as the oasis of chayote, dishes from chayote have become specialties of Tam Dao cuisine that are hard to find everywhere else. If you have chance to visit here, you should once try to taste these unique dishes.

Coming to Tam Dao, Vinh Phuc, we can not only admire the wild and fantastic beauty of the cloud, the mountain, the flowers and the French-style villas but also enjoy delicious dishes from a specialty of the locality – chayote. Chayote stalk has become a specialty of Tam Dao. Chayote stalk boiled and served with sauce or fried with garlic is very delicious. Diners can feel the sweetness, crispness, fragrance and freshness of the vegetable. Enjoying dishes from chayote stalks in Tam Dao in lightly cold weather is even more interesting. The strange taste and recipes of the dishes leave deep impression on diners.

I came to Tam Dao market, where many agriculture products are sold to visitors. Chayote stalks are indispensable in the market. After talking with the sellers, I met Pham Toan Thang, a cook of a famous restaurant in Tam Dao town. He was willing to share with me information about the delicacy of the beautiful land.  

Chayote originated in America, a continent with tropical climate. It was brought to Vietnam in the early 20th century and grown in Vinh Phuc nearly 100 years ago. This kind of vegetable is suitable for the sub-tropical climate and the soil of Tam Dao town. Therefore, chayote production of the town is higher than that of any other region in the country. Chayote stalks and fruits have become delicacies of Tam Dao. As far as I know, 25 different dishes can be made from these ingredients, and no one can resist their deliciousness. Perhaps I will come back here another time to admire green chayote forests.
